Shaved Brussel Sprouts with Lemon Mustard Dressing

Makes about 8 servings.
INGREDIENTS
For the salad:
4-5 cups Brussel sprouts (large size is best), shaved
1-2 Tablespoons red onion, finely diced
¼ cup slivered almonds
2 Tablespoons faux bacon bits (optional)
For the dressing:
½ cup lemon juice (about 2 medium lemons)
2 Tablespoons olive oil
2 teaspoons maple or agave syrup
1 Tablespoon dijon mustard
½ teaspoon onion powder
½ teaspoon arrowroot powder
Pinch of Himalayan sea salt
DIRECTIONS
1. Shave the Brussel sprouts using a mandolin, or simply slicing finely with a knife. When they get too small to shave without injuring your fingers, just chop the remains and add to the rest.
2. Place the shaved sprouts in a bowl along with the red onion and almonds.
3. Combine dressing ingredients in a bowl and whisk together.
4. About 30 minutes before serving, pour the dressing over the sprouts and place in the refrigerator so that the flavors can marinate.
5. If desired, serve with faux bacon bits on the side (they will get mushy if marinated with the dressing).
6. Enjoy!
